Jeb's Texas Caviar Recipe

Here in Texas we do caviar a little differently. We pulled from our family recipe vault to share one of Co-Owner, Jeb Matulich's, favorites. You might be asking yourself what this dish could possibly be and no it is not Texas fish eggs. Texas Caviar is a freshly made dip that consists of beans, tomatoes, avocados, peppers, and onions. Best served with some Texas made tortilla chips. Save this recipe for the next big game or your next big get together and it will surely be a fan favorite. It is easy to make and just takes a few minutes to put together. Jeb made a few tweaks to the recipe that make it his own. Our team cannot get enough of it. This is a great dip with substance and zesty taste!  

Ingredients:

1 can jalapeno black-eyed peas (drained)
1 can field peas with snaps or black beans (drained)
1 red onion (finely diced)
1 bell pepper (finely diced)
1 small can sliced black olives (drained) - Jeb likes to skip olives and add another can of jalapeno black-eyed peas (drained)
1 garlic button (chopped)
2 fresh tomatoes (chopped)
2 avocados (chopped)
1 small bottle of wishbone Italian dressing


Instructions:

Mix all the ingredients, except for the chopped avocados, together in a big bowl.
Chill 4-6 hours
Once ready to serve chop up the avocados and mix them into the dip.
